Why is Passover different for vegans than for everyone else?
Passover is hard enough as it is, but when you rely on beans, lentils, and rice for hearty meals, how can you ever make meals that are filling and satisfying when these things are not allowed for eight days?
Since becoming more plant-based I have found that I have had to redefine what a meal looks like. For me, it means having hearty mains, flavourful carbs, fresh veggies, and powerful sauces.
Passover should not be any different. I have been working on putting together recipes that will make us feel that we are lacking nothing and we are excited to eat.
Ingredients:
- 1 head red cabbage
- 2 tbsp olive oil
- 2 tsp coarse salt
Chimichurri Sauce:
½ cup parsley, chopped
1 tbsp olive oil
¼ cup yellow or red bell pepper, chopped
¼ cup red onion, diced
1 clove garlic, diced
1 tsp coarse salt
½ lemon, juiced
