Sweet Potato boats are an amazing base for any grain dish or salad, top with some herbs and a hardy sauce you got yourself a meal.

Ingredients:
- 2 Sweet potatoes
- Olive oil
- Coarse salt
Method:
- Preheat oven to 410 degrees. Using a sponge, scrub the sweet potatoes well to remove any residue from the skin. Rinse well. Place the washed sweet potatoes on a cutting board, cut across the sweet potatoes to make two boats. Be careful when you cut! Line a baking sheet with baking paper.
- Drizzle baking sheet 3-4 tablespoons of the olive oil and sprinkle with the coarse salt. Place the sweet potatoes, with the halved side down on the baking sheet. *Note: It is important that the entire cut side of the sweet potato is coated with oil. Shake the pan slightly to evenly distribute the oil and salt. Rub olive oil on the outside (on the skin) of the sweet potato.
- Transfer to oven and bake 35-50 minutes (depending on the size of your sweet potato and oven), until the sweet potatoes are completely baked, and very soft. The exterior should be slightly burnt at the edges, it is the most delicious (it is recommended to start checking on the sweet potatoes after 30 minutes). Remove from oven, let cool slightly and serve. *Note: Because we scrubbed the sweet potato, the skin is completely edible! * Can be refrigerated for five days but it’s most delicious 15-20 minutes after leaving the oven.
